Abstract





 






People need a nutritionally balanced diet to survive, grow, and maintain their health. Food safety is a must in terms of satisfying the requirements of a nutritionally balanced diet. However, food which is essential to our lives, can become harmful due to insufficient hygienic conditions at various stages from production to consumption, and can pose a hidden danger to our health. For this reason, food safety must be ensured in the whole process from production to consumption. Microorganisms that are found naturally in the structure of vegetable-based and animal-based foods are among the most threatening risks to food safety. Bacteria are the most dangerous microorganisms which are classified as biological hazards. These microorganisms are found everywhere and reproduce rapidly by dividing under appropriate conditions. In this study; some of the bacteria associated with food safety hazards and their health effects are explained in detailed.
