Ergonomics and Working Conditions in Industrial Kitchens

Abstract

Along with the increase in tourism activities, the number of people traveling has increased and women's participation in the working life,social and economic changes and developments have increased thefrequency of people eating out and many food and beverage businesses have been opened to meet this need. With the increase in production in industrial kitchens, the necessity to regulate the relations between human and working environment, which is one of the production elements, has emerged, and as in all production branches, the science of ergonomics was needed during production in industrial kitchens. The working environment conditions in industrial kitchens should be cleared of negative situations arising from issues such as heat, humidity, noise, light and giving both physical and psychological distress to employees. In this study, ergonomics and working conditions in industrial kitchens are emphasized.
